A wholesome summer salad featuring fluffy couscous, crisp vegetables and the rich taste of Dr. Coy’s Organic Vegetable Bouillon
Infused with Dr. Coy’s Organic Vegetable bouillon and topped with a zesty honey mustard lemon dressing – it’s fresh, filling and ridiculously easy to make.
Perfect with a slice of sourdough and a sunny day. Also works as a gorgeous side with your BBQ dinner!
Ingredients 4 portions:
Add Approx 120g of
CousCous as the base (160ml of Stock with 1/2 teaspoon of Dr. Coy’s Vegetable Bouillon)
Then add in what your hearts desire or what you find in your fridge 😉 for example cucumber, pomegranate, olives, feta, red onion and pea shoots, but anything goes here!
Dressing: Honey Mustard lemon Dressing:
Olive Oil – 600ml
Honey – 150ml
Dijon Mustard -60ml
Fresh lemon juice 120ml
salt – 1 teaspon
Black pepper – 1/2 tsp
Whisk together well the honey, mustard and lemon juice. Slowly drizzle in the olive oil while whisking.
Add salt and pepper to taste. This should store well in a sealed container for 2-3 weeks in fridge.
